Simple Banana Bread

Banana bread is a great way to use up over-ripe bananas and this recipe is seriously simple and you can’t go wrong with that!

Banana bread is a great way to use up over-ripe bananas or even to use up bananas before they reach that state.  It isn’t often in our family that bananas get like that but when they do I like to pop them in the freezer until I have enough to make a nice loaf for my family to enjoy.  This recipe is seriously simple and you can’t go wrong with that!  It is super delicious warm and smothered in butter. Yum!

Simple Banana Bread

INGREDIENTS:

4 ripe Bananas
2 Eggs, beaten
1 cup Sugar
1 tsp Vanilla
1/2 Cup Walnuts, chopped
1/2 c. vegetable oil
2 c. flour (1 c. can be whole wheat)
1 tsp. baking soda
1/2 tsp. salt

 

Banana bread is a great way to use up over-ripe bananas and this recipe is seriously simple and you can’t go wrong with that!

DIRECTIONS:

Preheat oven to 350.
Grease inside of a loaf pan with shortening.
In a large bowl, mash bananas.
Beat eggs and add to bowl.
Add sugar vanilla, walnuts and oil and mix in well.
Whisk together dry ingredients and add to banana mixture.
Mix well and pour into prepared pan.
Bake 50-60 minutes or until toothpick inserted in centre comes out clean.

Easy and tasty recipe if you don't want your bananas to go to waste. I added a little cinnamon and nutmeg to the mixture. My first time making banana bread and it won't be my last.

I presume you added walnuts to the mixture? I love walnuts in banana bread!
