Drop the store bought chips because I’ve got the perfect Homemade Potato Chips recipe for you!  There is just nothing like homemade potato chips – thick, crisp and so fresh.  These homemade potato chips are great with Sriracha Ketchup (1 teaspoon Sriracha Sauce for every tablespoon of Ketchup).

Homemade Potato Chips

INGREDIENTS
1 lb Potatoes (Idaho or Yukon)
Salt, Garlic Salt or Sea Salt
Fresh Ground Black Pepper
Vegetable Oil (for Frying)

DIRECTIONS
Wash potatoes.
Using a mandolin slicer, thinly slice potatoes and place in cold water.
In a heavy pan, heat oil to 400.
Dry potatoes one batch at a time on paper towels.
Prepare another plate lined with paper towels for the chips as they come out of the oil.
Cook in small batches in the oil, stirring and turning often.
Remove when brown and crispy and place on prepared plate.
Salt and pepper immediately.
Repeat with remaining potatoes.

I definitely need a mandolin slicer to slice the potatoes thin and evenly... Can't wait to make my own chips! :)
