These Cucumber Rollups with Fresh Herb Cream Cheese make for a nice substitution to the typical veggie tray at bbq’s and parties. It’s also a great way to get the kiddos to eat more veggies since these little crunchy rolls are so fun to eat!

Cucumber Rollups with Fresh Herb Cream Cheese

Ingredients:
1 medium Cucumber, sliced thin horizontally (a vegetable peeler works well for this)
1 bell pepper (or ½ orange and ½ yellow or other color your choose), cut into short thin strips
Sliced Avocado
Optional: add thin strips of carrots, tomato or even fresh spinach

For the Herb Cream Cheese spread:
4 ounces cream cheese, room temperature
½ teaspoon apple cider vinegar
Pinch of salt
Pinch of cayenne pepper
1 sprig fresh dill, finely chopped
1 sprig fresh flat-leaf parsley, finely chopped
Optional: substitute or add more of your favorite herbs (fresh basil, marjarom, tarragon, etc.)

Directions:

 


1. Lay thinly sliced cucumber slices on a flat surface. Blot them gently with dry paper towels to soak up excess moisture. Set aside.

 


2. Assemble the herb cream cheese spread: Start by mixing the room temperature cream cheese, apple cider vinegar, salt and cayenne pepper until incorporated. Add in the finely chopped fresh herbs and stir to combine.

 


3. Spread a thin layer of the herb cream cheese onto each cucumber strip. On one end of the cucumber, place your filling options (bell pepper strips, sliced avocado – or other options of your choosing!). Optional: Garnish by adding a small sprig of any fresh herb you like on a few for presentation.
4. Roll up and serve chilled.
