Whipped Coconut Popsicles

Whipped Coconut Popsicles are silky smooth and creamy like a creamsicle without the dairy!  A Delicious dairy-free summer treat.

I really love the flavour of coconut and these popsicles are extra silky smooth and creamy.  Add a little vanilla to the mix for a flavour that is close to vanilla ice cream.

Whipped Coconut Popsicles

Ingredients:

1 Can Coconut Milk, Full Fat (No Guar Gum listed in ingredients)
1 tbsp sugar
1 tbsp sweetened shredded coconut (Optional)

Directions:

Place the coconut milk and sugar in a mixing bowl and with a mixer whip the mixture until it forms soft peaks.

Fold in shredded coconut if using.

Spoon mixture into Popsicle moulds and freeze for 5-6 hours.
