Roasted Chicken with Peanut Sauce

This Roasted Chicken with Peanut Sauce is a tasty asian inspired dinner recipe. You family will go wild for the peanut sauce, juicy insides and crispy skin!

Chicken Skewers serves with peanut butter satay sauce is probably one of my most favourite treats at Thai restaurants.  I’m kind of drooling just thinking about it.  So I thought, why not roast a whole chicken and serve it up with some homemade peanut butter sauce?  Why not indeed.

Whole Chickens are usually pretty inexpensive compared to their butchered counterparts so this makes for a pretty thrifty family meal.  You can feed your whole family of 4 for two nights in a row for the cost of a single plate at a thai restaurant. I’d say that is a win!

Roasted Chicken with Peanut Sauce

Ingredients:

1 whole chicken

Salt & pepper (To Taste)

3-4 Sprigs fresh rosemary
1 lemon, halved
1 Bulb garlic, broken down into cloves and peeled
Butter, Olive Oil or Coconut Oil

For the Peanut Sauce:

1/2 cup peanut butter
1/2 Cup coconut milk
1 Tbsp soy sauce
1 tsp cayenne pepper
3 Tbsp lime juice

 

Directions:

Preheat oven to 425 degrees F.

Place chicken in a roasting or glass pan.

Salt and pepper inside of chicken and stuff with rosemary, lemon and garlic.

Cook for an hour and a half, basting with pan juices halfway through cooking.

While the chicken is roasting, prepare the sauce by whisking together sauce ingredients in a medium sized bowl.

Serve with Peanut Sauce.

  • 1/2 cup peanut butter

Instructions
 

  • Preheat oven to 425 degrees F.
  • Place chicken in a roasting or glass pan.
  • Salt and pepper inside of chicken and stuff with rosemary, lemon and garlic.
  • Season the outside of the chicken well with salt and pepper then rub oil or better all over the outside.
  • Cook for an hour and a half, basting with pan juices halfway through cooking.
  • While the chicken is roasting, prepare the sauce by whisking together sauce ingredients in a medium sized bowl.
  • Once cooked, take the chicken out of the oven and transfer to a board to rest for 15 minutes covered with a layer of tinfoil.
  • Serve with Peanut Sauce.
