Mini Clementine Cream Tarts

These Mini Clementine Cream Tarts feature a homemade clementine curd that is full of the memories of summer! This recipe is definitely a keeper!

These Mini Clementine Cream Tarts are sweet and delicious with a homemade clementine curd that is incredibly easy and unfussy.  It’s got a bit of a zing that pairs quite well with fresh whipped cream.  Mmm!  This is a great way to use up all those clementines that seem to accumulate around this time of year and create a dessert that is full of the memories of summer!  This recipe is definitely a keeper!

Mini Clementine Cream Tarts

Ingredients:

6 Mini Graham Cracker Pie Crusts
4 oz softened Cream Cheese
1/4 cup Sugar
1/4 cup pureed Clementine segments (about 1 1/2 Clementines)
1 beaten Egg
1/4 tsp Ground Ginger
1/2 cup Whipping Cream, Whipped
6-12 Clementine segments as garnish
1/8 tsp Clementine Zest

Directions:

Preheat oven to 350.
Beat cream cheese and sugar until blended.
Add egg and ground ginger and pureed Clementines and mix until blended.
Place crusts on a baking sheet.
Pour mixture into crusts.

Bake 20 minutes.
Cool for 20 minutes.
Refrigerate at least 1 hour before serving.
Top with whipped cream, Clementine segment and zest for garnish.
