About the Ingredients for Clementine Cream Tarts

Crust – I used pre-made graham cracker crusts but you can do these homemade easily. You could also use mini pastry shells instead.

Cream cheese – Use full fat cream cheese for the best flavour.

Sugar – Just plain old granulated sugar.

Clementine – You can also substitute 1:1 with any other fruit puree of your choice.

Egg – You want to start with a room temperature egg for the cheesecake filling.

Ginger – A little ginger really complements the citrus flavour.

Cream – You can substitute with cool whip if you like, but for the best flavour use homemade whipping cream.

How to Store Clementine Cream Tarts

Clementine Cream Tarts can be stored in the fridge for up to 3 days in an airtight container.

To freeze Clementine Cream Tarts, place them on a baking sheet lined with parchment paper and freeze for 2 hours. Then transfer them to a freezer-safe bag or container and freeze for up to 3 months.

When you’re ready to eat, thaw Clementine Cream Tarts overnight in the fridge or for 2 hours at room temperature.

Clementine Cream Tarts are best the day they’re made, but will still be tasty for a few days after.

Mini Clementine Cream Tarts

Yields: 6 Tarts | Prep time: 10 Minutes | Cook time: 20 Minutes | Chill time: 1 hour 20 Minutes

Ingredients:

6 Mini Graham Cracker Pie Crusts
4 oz Cream Cheese, softened
1/4 cup Granulated sugar
1/4 cup pureed Clementine segments (about 1 1/2 Clementines)
1 Egg, beaten
1/4 teaspoon Ground Ginger
1/2 cup Whipping Cream, whipped
6-12 Clementine segments as garnish
1/8 teaspoon Clementine Zest

Directions:

Preheat your oven to 350 degrees Fahrenheit. Place crusts in their individual tins on a baking sheet.

Beat cream cheese and sugar until blended.

Mixing together the batter in a bowl.

Add egg, ground ginger, and pureed Clementines and mix until blended.

Batter poured into the tart crusts ready to bake on a baking sheet.

Pour mixture into the prepared crusts and bake 20 minutes.

Allow to completely cool at room temperature and then chill about 1 hour before serving.

Top with whipped cream, Clementine segment and zest for garnish.

Ingredients
