These Cherry Cheesecake Brownies look about as amazing as they taste.  They’re made with rich chocolate brownie batter and a creamy cheesecake filling, and are topped with sweet cherries

You can use your favourite brownie recipe or a box mix if you want it to be super easy.

About the Ingredients for Cherry Cheesecake Brownies

Brownie mix – We used a 13×9 family size box of brownie mix. You can also use your favourite homemade brownie mix, but you may need to double it if your recipe is intended for a square pan. You don’t want the brownie layer to be too thin.

Eggs – Make sure your eggs are room temperature so that your batters combine perfectly.

Oil – Do use a neutral flavoured oil for making the brownies.

Cream cheese – Use full fat cream cheese for the best flavour. It should also be room temperature so your cheesecake layer is smooth and creamy without chunks.

Sugar – Plain old granulated sugar.

Vanilla – Pure vanilla extract will give you the best results but artificial vanilla extract is ok too if that is all you have on hand.

Cherry pie filling – You can swap this for any other flavour of pie filling — strawberry pie filling or blueberry pie filling would also be delicious!

How to Store Cherry Cheesecake Brownies

These brownies are best stored in an airtight container in the fridge for up to 5 days.

To freeze, wrap the brownies tightly in foil or plastic wrap and place in a freezer-safe bag. Freeze for up to 3 months. Thaw overnight in the fridge before serving.

Cherry Cheesecake Brownies

Yields: 12 Servings | Prep time: 10 Minutes | Cook time: 35 Minutes

Ingredients:

1 box Brownie Mix
2 eggs (or quantity called for on box)
1/4 cup Oil (or quantity called for on box)
1/2 cup Water (or quantity called for on box)
8 oz Cream Cheese, softened
1/2 cup Granulated sugar
1/2 teaspoon Vanilla extract
1 Large egg, room temperature
1/2 cup Cherry Pie Filling

Directions:

Preheat oven to 350 degrees Fahrenheit. Grease a 9×13 baking pan, or line with parchment paper.

Making the brownie batter in a large bowl.

Prepare brownie batter in a large mixing bowl according to box directions.

Pour batter into prepared pan and level.

Making the cheesecake layer in a large bowl.

Beat together the cream cheese, sugar and vanilla.

Add beaten egg and mix well to combine.

Gently spread cream cheese mixture on top of brownie batter.

Bake for 25 minutes, then remove from oven and pour the cherry pie filling over top of the baking cheesecake filling.

Return to oven and bake an additional 10 minutes, or until the center of the cheesecake layer just barely jiggles when shaken.

Allow to completely cool at room temperature, then chill in the fridge for at least 2 hours before slicing and serving.

This should be interesting.....I have never baked anything with a cream cheese mixture on top of a cake AFTER spreading it on top.... wow and then adding the cherry filling on to and bake again... Looks and sounds delicious!! Must try!!
