Roasted Rainbow Carrots

Ingredients:
1 Bunch Rainbow Carrots
1 tbsp Extra Virgin Olive Oil
1/2 tsp Sea Salt

Directions:

Preheat oven to 450 degrees F
On a baking sheet, toss together the carrots, oil and salt then arrange the carrots in a single layer.
Roast for approx. 15 minutes, or until the carrots are slightly browned and tender.

I've never seen multi covered carrots before but I love how simple your recipe is, I think I'd use sweet carrots
