Roasted Chicken with Peanut Sauce
  • 1 whole chicken
  • Salt & pepper (To Taste)
  • 3-4 Sprigs fresh rosemary
  • 1 lemon, halved
  • 1 Bulb garlic, broken down into cloves and peeled
  • Butter, Olive Oil or Coconut Oil
  • For the Peanut Sauce:
  • ½ cup peanut butter
  • ½ Cup coconut milk
  • 1 Tbsp soy sauce
  • 1 tsp cayenne pepper
  • 3 Tbsp lime juice
  1. Preheat oven to 425 degrees F.
  2. Place chicken in a roasting or glass pan.
  3. Salt and pepper inside of chicken and stuff with rosemary, lemon and garlic.
  4. Season the outside of the chicken well with salt and pepper then rub oil or better all over the outside.
  5. Cook for an hour and a half, basting with pan juices halfway through cooking.
  6. While the chicken is roasting, prepare the sauce by whisking together sauce ingredients in a medium sized bowl.
  7. Once cooked, take the chicken out of the oven and transfer to a board to rest for 15 minutes covered with a layer of tinfoil.
  8. Serve with Peanut Sauce.
