Tomato & Dill Soup

Serves: 4
  • 2 Tbsp Extra Virgin Olive Oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 5 medium sized tomatoes, chopped
  • ¼ Cup fresh dill weed, chopped
  • ¼ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 4 Cups Vegetable broth
  1. Heat EVOO in a large saucepan over medium-high heat.
  2. Add onion and garlic, and saute unti they start to soften, about 3-4 minutes.
  3. Stir in the tomatoes, broth, dill weed, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Puree the soup in a blender until smooth.
  6. May be served immediately or chilled and served as a cold soup.
