Whole Wheat Baked Blueberry Donut
Serves: 6
  • ⅔ Cup Whole wheat flour
  • ⅓ Cup All Purpose Flour
  • ⅓ Cup, granulated Sugar
  • 1 tsp Baking Powder
  • ¼ tsp Baking Soda
  • ¼ tsp Salt
  • ⅓ Cup Greek Yogurt
  • 3 tbsp Milk
  • 2 tbsp Oil
  • 1 tsp Vanilla Extract
  • 1 large Egg, room temperature
  • 1 Cup Fresh Blueberries
  • Confectioners Sugar for dusting the donuts (optional)
  1. Preheat oven to 350 F. Grease the donut pan with cooking spray.
  2. In a bowl, mix together all the dry ingredients - Wholewheat flour, AP flour, Sugar, Baking Powder, Baking Soda and Salt.
  3. In another bowl, mix together Greek Yogurt, Milk, Oil, Vanilla Extract and Egg till just combined.
  4. Add the wet ingredients to the dry ingredients and mix till the batter comes together. The batter will be thick. Fold in the blueberries.
  5. Spoon the batter into prepped donut pan and not all the way up to the rim. Bake for 12 to 14 minutes. Insert a toothpick into a donut and if it comes out clean, your donuts are done. If not, add couple of more minutes of bake time.
  6. Allow the donuts to cool in the baking pan for about 10 minutes. Transfer to a wire rack and let the donuts cool down completely.
  7. Hit it with a little confectioners sugar before serving.
  8. Store in an airtight container for up to 3 days.
