Lemon Cream Cheese Pudding
  • 4 Cups milk
  • ½ Cup cream cheese
  • ¼ Cup cornstarch
  • 3 Tbsps lemon juice
  • 1 Egg yolk
  • 1 Tbsp butter
  • ½ Cup sugar
  • 1 Cup crushed cookies
  1. In a large pot over medium heat, whisk together the cream cheese, sugar, cornstarch, butter, lemon juice, milk, and egg yolk, until it thicks.
  2. Turn off the heat and set aside to cool down.
  3. Add a thin layer of crushed cookies to the glasses, and pour the lemon pudding.
  4. Cover the bowls and refrigerate for 4 hours.
  5. Garnish the with lemon slices and cookies.
  6. Serve and enjoy.
