Cherry Macaroons
Cherry Macaroons are one of my all time favourite Christmas cookies. Classic coconut macaroons are topped off with a cherry for real old-world charm.

Cherry Macaroons
Ingredients:
14 oz flake coconut
2/3 cup sugar
7 tsps all purpose flour
4 egg whites
1 tsps vanilla extract
1/4 tsp salt
maraschino cherries
Directions:
Preheat oven to 325 degrees.
In a large mixing bowl, combine the flake coconut, sugar, flour and salt.
Add the egg whites and mix well.
Line a cookie sheet with parchment paper.
Drop the macaroon mixture by the tbsp onto the cookie sheet.
Use your thumb to create a well in the coconut mixture and add a maraschino cherry.
Bake for 17-20 minutes or until edges are golden brown.
Allow macaroons to cool completely.
Enjoy!

After baking, feels like the cherries will fall off even though I made a well. Any tips? Made for a wedding and I’m afraid if 5he box gets upset, the cherries will fall off
@Jill, I suggest cutting the cherry in half, less likely to roll out.
Was I supposed to beat the egg whites first? The cookies were flat and spread out.
Coconut macaroons may spread due to too much moisture, so if it is humid in your house beating the egg whites first can help or you can add another tablespoon of flour. You can also chill the mixture before you portion it out.
Was wondering how many this makes. And also if cocoa could be added for chocolate macaroons
It makes 36 cookies, sorry this is an older recipe that desperately needs updating! I haven’t tried adding cocoa before but that should be fine, but you may need to remove some of the flour to get the texture right.
Can you use liquid egg whites like Eggland’s Best in this receipe?
