Tips for the Best Skillet Bruschetta Chicken
- Use evenly sized chicken breasts so they cook at the same rate. If needed, lightly pound thicker pieces for more even cooking.
- Don’t overcook the chicken in the skillet. A quick sear is all you need before finishing in the oven to keep the chicken juicy.
- Add the bruschetta topping just before serving. This keeps the tomatoes fresh and prevents the chicken from becoming watery.
- Let the chicken rest for a few minutes after baking so the juices redistribute.
- Shred your own mozzarella for better melting and flavour.
How to Store and Reheat Bruschetta Chicken
To store:
Let the chicken cool completely, then store it in an airtight container in the fridge for up to 4 days. For best results, store the bruschetta topping separately if possible.
To reheat:
Reheat gently in a skillet over medium-low heat or in the oven at 325°F until warmed through. Add the bruschetta topping after reheating to keep it fresh.
Avoid the microwave if possible, as it can make the chicken dry and the tomatoes watery.

Equipment Needed to Make Skillet Bruschetta Chicken
You’ll need the following kitchen tools:
- Small mixing bowl for seasoning
- Medium mixing bowl for the bruschetta topping
- Cast iron skillet (or other oven-safe skillet)
- Measuring cups and spoons

Ingredients & Substitutions
- Tomatoes – Campari tomatoes are awesome for making brushetta because they are always flavourful and never mealy. Plum tomatoes are a good second choice if you can’t find campari. You can also substitute with halved cherry tomatoes or grape tomatoes.
- Red onion – You could also use shallots instead.
- Basil – Fresh basil only, do not substitute with dry basil.
- Garlic – The garlic isn’t getting cooked. so for those of you out there who triple the garlic in every recipe – maybe ease up a bit here.
- Cheese – For the best flavour shred your own mozzarella.
- Vinegar – Balsamic vinegar, red wine vinegar is an OK substitute but for best flavour please just stick with balsamic. If you do use red wine vinegar, you will need to add about a half teaspoon of sugar or sugar substitute.
- Chicken – Boneless, skinless chicken breasts is best here, if you use another cut of chicken you will need to adjust the cooking time accordingly. You can also grill the chicken if you prefer.
- Seasoning – We are using a combination of salt, pepper, basil, parsley, onion powder, and garlic powder. You can substitute with Italian seasoning if you like.
- Oil – We used avocado oil but olive oil is a good substitute.
