How to Make Key Lime Meltaway Cookies

Ingredients:

1 Cup unsalted butter, softened
3/4 Cup sugar
1 large egg
2 limes, zested
2 Cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt

For the Key Lime Glaze:

1 3/4 Cups powdered sugar
2 tablespoons lime juice
1/4 Cup heavy cream
1 teaspoon rum

Directions:

Preheat the oven to 350 degrees Fahrenheit, and line two cookie sheets with parchment paper. Set aside.

Cream the butter and sugar together in a large bowl, then mix in the egg and zest until well combined.

Add the flour, baking powder, and salt to a small bowl and whisk together. Add the dry ingredients to the butter mixture and stir until combined.

Use a small cookie scoop or tablespoon to measure dough, then roll them into balls and slightly flatten with your palm and place on the cookie sheet.

Bake in the oven for 8-10 minutes or until light brown on the bottom. Let the cookies sit for 2 minutes, then transfer them to a cooling rack.

Using a medium bowl, whisk the powdered sugar, lime juice, salt, Rum and heavy cream until smooth.
