The secret to perfect mashed potatoes is simple.  Start with a delicious but still starchy type of potato – yukon gold.  Season the potatoes as they cook by added salt to the water, and get an even cook by starting with cold water rather than hot.  Continue on the path to success by mixing in warm, not cold, milk and butter and limit the amount you are working with the potatoes.

Of course, adding in a match-made in food-heaven helps too and that is where these Broccoli Cheddar Mashed Potatoes comes in.

Broccoli Cheddar Mashed Potatoes

Ingredients:

6-8 Medium Yukon Gold potatoes, Quartered (peeled if desired)
1/2 tsp Salt
3 cups fresh or frozen broccoli florets
1/4 cup butter, room temperature
1/2 cup milk, room temperature
2 cups shredded cheddar cheese
Salt & Pepper, to taste

Directions:

Place the potatoes and salt in a large pot and add cold water to about an inch above the potatoes. Turn the heat on high, and bring to a boil then reduce heat to a simmer and cover for 20-25 minutes or until tender.  When the potatoes are nearly cooked (about 5 minutes remaining), add broccoli florets to the pot.

Drain the pot. Add the butter and 1/2 milk and mash the potatoes with a potato masher until light and fluffy.  Stir in the cheddar cheese, salt and pepper.  Gradually stir in additional milk until you achieve the desired level of creaminess.

Don’t over-mash the potatoes or they will quickly go from fluffy to gluey.

I know that I'd love these, I've put cheese in mashed potatoes but never even thought of adding broccoli which I love too. Thanks for the idea and recipe :-)
