About the Ingredients for Easy Fried Banana Bites
Bananas – You want to use just ripe bananas or even slightly green bananas. Over-ripe bananas will get mushy and hard to work with.
Pancake mix – Use the type of pancake mix that requires the addition of eggs and milk. Avoid using the “just add water!” type of mix.
Milk – Use any type of milk that you prefer. Room temperature milk is best as it will help the batter come together better.
Eggs – Use room temperature eggs for the best results.
Powdered sugar – For dusting.
Oil – Vegetable oil or any other neutral flavoured oil with a high smoke point.
Vanilla – For a little extra sweetness to the batter you can add in a splash of vanilla extract.

I haven't tried. You should be able to though as both the batter and bananas freeze well.

No, your bananas need to be firm, almost green.

Is this made using pancake mix that requires the addition of milk and eggs, or the "just add water" complete kind of pancake mix? I ask because I was just wondering if the egg and milk could be omitted from the recipe, If using the complete type of mix?

Yes, using the mix that requires the addition of milk and eggs. If you use the kind that requires only water, you would need to use a bit less than called for to make a thicker batter.
