Ingredients for Meringue Christmas Trees.

Ingredients and Substitutions

  • Egg Whites – Provide structure and stability for the meringues. If you need a vegan alternative, aquafaba (the liquid from a can of chickpeas) can replace egg whites. Use 3 tablespoons of aquafaba per egg white and whip as you would with eggs.
  • Powdered Sugar – Sweetens and stabilizes the meringue. If you’re out of powdered sugar, you can blend granulated sugar until finely powdered.
  • Cream of Tartar – Stabilizes the egg whites and helps achieve stiff peaks. You can substitute with an equal amount of lemon juice or white vinegar in a pinch.
  • Green Food Coloring – Gives the meringues a festive color. Gel food coloring is often preferred because it won’t thin out the mixture. If you want to avoid artificial dyes, try natural green powders like matcha or spinach powder.
  • Sprinkle Star Decorations – Adds a decorative touch to complete the tree look. If unavailable, you can cut tiny stars from fondant or use edible gold stars, or simply leave them plain for a minimalist look.

Meringue Christmas Trees

Yields: 20 Trees | Prep time: 20 Minutes | Cook time: 3 Hours

Ingredients:

  • 4 Egg Whites, room temperature
  • 2 1/2 cup Powdered sugar
  • 1/2 teaspoon Cream of Tartar
  • Green Food Colouring
  • Sprinkle Star Decorations

Directions:

Preheat oven to 200°F. Line two cookie sheets with parchment paper. Set aside.

In a mixing bowl, whip egg whites on high speed until stiff peaks form.

Gradually add powdered sugar, about ½ cup at a time, continuing to whip on high and scraping down the sides as needed.

Add food coloring and cream of tartar, then whip until fully blended.

Transfer mixture to a piping bag fitted with a large star tip.

Pipe meringues onto the prepared sheets, swirling in a circular motion to form small cones, like soft-serve ice cream.

Bake for 2 hours, then turn off the oven and leave the meringues inside with the door slightly open for an additional hour.

To attach stars on top, create a “glue” by mixing ¼ cup powdered sugar with a few drops of water.

Use a toothpick to dab a small amount of the mixture onto each star and press gently to affix.
