Tips for Making the BEST Easter Parfaits

  • Use good quality ingredients for the best results.
  • Always melt the wafers on low heat, whether using the double boiler method or melting it in the microwave. Heating them on high heat can cause it to seize and thicken, making it difficult to get a thin and even layer of coating.
  • If your melts do seize up you can loosen it up with a little more coconut oil or vegetable shortening stirred in until smooth.
  • Adding orange sanding sugar to the chocolate drizzle on the strawberries can be a fun detail.

How to Store Easter Chocolate Bowls

Store the Easter parfaits in an airtight container in the refrigerator for up to 3 days. T

You can make the filling ahead of time and store it in the fridge for up to 3 days. Assemble the dirt cups when you are ready to serve them.

I do not recommend freezing them as the pudding will get grainy.

About the Ingredients for Carrot Patch Chocolate Bowls

Candy melts – You will need orange candy melts for the strawberry carrots. If you can’t find orange candy melts you can also use white chocolate and colour it orange with oil based food colouring.

Oil – Coconut oil works well thin out melted candy melts, you can also use vegetable shortening.

Strawberries – You want fresh strawberries that have been washed and then dried carefully with paper towels. Do not hull the strawberries.

Brownies – You can make a fresh batch of brownies or use store bought.

Pudding mix – Instant pudding mix is best, but you can make cooked pudding ahead of time and let it chill while preparing the rest.

Milk – For preparing the pudding.

Chocolate chips – For making the chocolate ganache. You can use dark chocolate or milk chocolate instead if you like.

Cream – You need cream for making ganache. You can use lighter cream if you like or even milk.

Oreos – REgular oreos, cream and all – crushed. You can substitute with chocolate crumbs if you like but I personally prefer making my own.

Melting wafers – Ghiradelli are good quality melting chocolate that are easy to work with and taste great. You could substitute with chocolate but you will need to temper it. Using melting wafers allows you to skip that process.

How to Make Carrot Patch Chocolate Bowls

Yields: 12 Chocolate bowls | Prep time: 25 minutes | Cook time: 5 Minutes

Ingredients:

1 ½ Cup Orange candy melts
2 teaspoons coconut oil
12 large strawberries, rinsed and dried well
1 package chocolate fudge brownies, cut into tiny chunks
1 package instant fudge brownie pudding mix
2 Cups whole milk
1 Cup semi sweet chocolate chips
½ Cup heavy whipping cream
1 Cup crushed oreos
16 oz package Ghirardelli milk chocolate melting wafers

Directions:

Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

Place the orange candy melts in a small deep microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth, about 2 minutes.

Stir in the coconut oil until smooth.

Dip the strawberries in the melted candy and swirl until fully coated.

Place the freshly coated strawberries onto the baking sheet. Repeat with all strawberries.

Drizzle some of the remaining melted candy back and forth across the strawberries with a spoon to make horizontal lines.

Set aside and allow to set for one hour.

Melt the ghirardelli milk chocolate wafers in a large bowl in increments of 45 seconds.

Using a spoon, spoon some of the melted chocolate into 6 sphere molds and coat the entire mold.

Dump any excess chocolate back into the bowl.

Place the coated moulds into the fridge for 5-10 minutes.

Remove from the fridge and gently peel the silicone mold back away from the hardened shell.

Carefully place the chocolate bowl onto the cookie sheet. Make a second set so you have 12 bowls.

Using a small pot, bring the heavy cream to a simmer.

Place the chocolate chips in a heat safe bowl, and pour over with the hot cream. Allow to sit for 1 minute.

Whisk until smooth and set aside to allow to cool. Make sure to occasionally stir it so it doesn’t harden.

Follow the directions on the back of the pudding mix to make the pudding.

Once the pudding is made, spoon about 3 tbsp of pudding into the chocolate spheres.

Add a layer of the bite size brownie pieces on top of the pudding.

Spoon chocolate ganache over the brownies.

Sprinkle crushed oreos on top.

Place a carrot strawberry into the center.
