Homemade strawberry crunch topping is easy to make at home if you can’t find any pre-made.

Ingredients:

  • 24 (272 g) golden Oreos or shortbread cookies, crushed
  • 3 oz strawberry jello or freeze dried strawberry powder
  • 1/4 cup butter, melted

Directions:

Preheat oven to 350 degrees Fahrenheit.

Combine the cookies, jello and butter in a medium bowl until well combined.

Spread the mixture onto a baking sheet lined with parchment paper and bake for 7-8 minutes.

Remove from the oven and let cool. Break the crumble up as fine as desired.

How to Store Leftover Strawberry Crunch Cake

This cake should be stored in an airtight container in the fridge because of the cream cheese frosting. If you don’t place it in an airtight container it could dry out pretty quickly, so please store it correctly.

This cake does freeze well and will last for up to three months if stored properly. Wrap leftover cake well in plastic wrap and then in an airtight container or resealable freezer bag.

About the Ingredients for Strawberry Crunch Cheesecake Cake

Strawberry cake mix – You need to use a 15 oz (432g) cake mix. If you can’t get a strawberry cake mix you can use a vanilla cake mix and stir in either strawberry jell-o powder or freeze dried strawberry powder.

Cream cheese – Use full fat cream cheese for best results. You will also want to make sure your cream cheese is room temperature and easy to whip.

Sugar – For the cheesecake layer you will want plain old white sugar. For the frosting you want to use icing sugar.

Flour – A little all purpose flour helps to thicken the cheesecake. You can substitute with cornstarch if you prefer.

Vanilla – Pure vanilla extract will give the best flavour but artificial is fine too.

Eggs – It’s important to use room temperature eggs so that the batters combine properly.

Milk – Again, whole milk is best but any type of milk you have on hand will do, including non-dairy.

Oil – Canola or vegetable oil will work for the cake layer, or any neutral flavoured oil really. You can substitute with butter or do half butter, half oil. Just keep in mind that a cake made with only butter will get dry quickly after being cut.

Butter – For the cream cheese frosting you will want to use a little softened butter. You can go with salted or unsalted. If you go with unsalted butter you will want to add a quarter teaspoon of salt to the frosting.

Cream – Heavy cream will give the best results, but milk will work just fine.

How to Make Strawberry Crunch Cheesecake Cake

Yields: 14 Servings | Prep time: 15 Minutes | Cook time: 40 Minutes

Ingredients:

For the Vanilla Cheesecake Layer:

16 oz cream cheese, softened
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon pure vanilla extract
3 large eggs, room temperature

For the Strawberry Cake Layer:

15.25 oz strawberry cake mix
1 cup whole milk
1/2 Canola oil
3 large eggs, room temperature

For the Cream Cheese Frosting:

8 oz cream cheese, softened
2 tablespoons butter, softened
2 ½ cups powdered sugar
1 teaspoon pure vanilla extract
1 tablespoon Heavy Whipping Cream
3 cups Strawberry Shortcake Crumb Topping

Directions:

Preheat oven to 350 degrees Fahrenheit. Line the bottom of an 8 inch springform pan with parchment paper, and lightly grease the sides.

In the bowl of a stand mixer, or in a large bowl with a whisk, beat the cream cheese until soft and creamy.

Beat in the sugar and flour until combined.

Mix in the eggs one a time, then beat in the vanilla extract.

Set aside.

Using another large bowl, beat together the cake mix, milk, oil and eggs.

Cake pan with cake batter poured into bottom.

Pour half of the strawberry cake batter into the prepared pan, and spread evenly across the pan.

Cheesecake filling dropped into the cake batter.

Using a large spoon, drop dollops of the cheesecake mixture on top of the strawberry cake batter layer, reserving about a third of it.

Strawberry cake batter poured over the cheesecake filling.

Pour the rest of the strawberry cake batter on top, and spread evenly.

Drop the best of the cheesecake batter on top by the spoonful, then place the springform pan into a 12 inch deep baking dish.

Fill the baking dish with hot water about half way up the springform sides, then place in the oven and bake for 35-40 minutes, or until a cake tester comes out clean.

Remove the cheesecake onto a wire rack until completely cooled. Once cooled, place into the fridge overnight.

To make the frosting, in the bowl of a stand mixer, beat together the butter and cream cheese.

Gradually beat in the powdered sugar until combined and smooth, then add the milk and vanilla extract to the cream cheese mixture.

Run a knife around the edge of the cake to loosen it from the springform pan, then remove the cake to a serving plate.

Frost entire cake in a very thin layer of cream cheese frosting, then coat entire cheesecake cake using the
strawberry shortcake crumble.
