Gin & Tonic Popsicles
I grew up with Gin & Tonic in my life. My mother would often enjoy on in the hour before dinner and sometimes I was allowed a sip. Naturally, once I got old enough to drink, it became my cocktail of choice.
I love the crisp and refreshing flavour, although I think it may be a bit of an acquired taste combined with good Gin. Like my mother I love my G&T with a maraschino cherry and a little of its syrup mixed in.
These Popsicles have all the flavour of my favourite cocktail, and garnished my way. Perfect for an adult summer treat!
Gin & Tonic Popsicles
Ingredients:
2 oz London Gin
3/4 Cup Tonic Water
4 Maraschino cherries, chopped finely
Directions:
Put Maraschino cherries in bottom of Popsicle moulds.
Mix Gin andTonic then pour into moulds.
Freeze overnight.
*Should make approx. 4 moulds depending on their size.

I have put cucumber in my gin and tonic but I’ve never tried maraschino cherry – that sounds amazing. Hubby and I love to enjoy one at the end of a hot summer beach day.
