Grilling fresh sweet corn is a great way to add much flavor to any corn recipes you may want to enjoy this summer.
If you don’t have time for grilling corn, you can use pre-roasted corn bought from the store.
You may want to give this fresh corn salad a bit of a kick with the addition of fresh jalapeno or even a tsp of Chili powder.
How to Store Grilled Corn Salad
This salad stores really well in the fridge. Put it in an airtight container and it will keep for up to 3-4 days when chilled.
Since it does store so well, you can make it ahead of time.
Do not freeze this salad.
Ingredients for the Grilled Crack Corn Salad
Corn – To make things easier we use canned or frozen roasted style corn. You can also pan roast corn kernels in a little butter or oil in a cast iron skillet if you can’t find any already prepared roasted corn. Ideally though, roasting fresh ears of corn at home on your BBQ with the corn husks on is gonna give the best smoky flavor.
Bacon – You want perfectly crisp bacon here.
Onions – Use a large red onion.
Tomato – Any type of tomato works really. You could also use cherry tomatoes or grape tomatoes.
Ranch Salad Dressing – Use your favourite ranch dressing.
Cheddar Cheese – Shredded cheddar cheese is best here.
Garlic Powder – Adds a little extra punch to the dressing.
Salt & Pepper – Brings it all together.
Then garnish with fresh herbs. I used parsley but cilantro would work well too.

4 cups fire roasted corn ( 3 cans )
12 slices crispy bacon, finely chopped
1/4 cup onions, diced
1 Tomato, diced
1/2 cup Ranch salad dressing
1 cup shredded cheddar cheese
1 tsp garlic powder
1 tsp kosher salt
1 tsp ground black pepper
Parsley to garnish
Directions:
In a large bowl add the corn, onion, tomato, garlic powder, salt and pepper.
Toss to combine.
Add the ranch dressing and mix to combine.
Add the shredded cheddar cheese and toss to combine.
Garnish with parsley
