Beef Goulash Soup
This soup is based on a goulash, or stew, to which more broth has been added. Don’t be afraid of all the paprika, I promise you, it really does work well!
Ingredients:
2 lbs Stewing Beef, Cubed
2 tbsp All-Purpose Flour
vegetable oil
1 Large Onion, diced
4 medium carrots, diced
1 red bell pepper, seeded and diced
4 garlic cloves, minced
4 tbsp Paprika
1 Can Diced Tomatoes
1L Beef Stock
4 medium potatoes, peeled and cubed
Salt
freshly ground black pepper
Directions:
In a bowl, dredge the beef in the flour with salt and pepper
Heat a tablespoon of oil in large pot and brown the beef in small batches and set aside.
Add the onions, carrots, red pepper and garlic to the pot and cook about 10 minutes.
Add the beef, paprika, tomatoes, potatoes and beef stock.
Stir well, cover the pot and simmer for 2 hours.
