These Whole Wheat Baked Blueberry Doughnuts are delicious for breakfast with a hot mug of coffee. You will feel great knowing you are enjoying a healthier version of this classic favourite.
Whole Wheat Baked Blueberry Doughnuts
(Yield 6 donuts)
Ingredients:
2/3 Cup Whole wheat flour
1/3 Cup All Purpose Flour
1/3 Cup, granulated Sugar
1 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1/3 Cup Greek Yogurt
3 tbsp Milk
2 tbsp Oil
1 tsp Vanilla Extract
1 large Egg, room temperature
1 Cup Fresh Blueberries
Confectioners Sugar for dusting the donuts (optional)
Directions:
Preheat oven to 350 F.
Grease the doughnut pan with cooking spray.
In a bowl, mix together all the dry ingredients – Whole-wheat flour, All-purpose flour, Sugar, Baking Powder, Baking Soda and Salt.
In another bowl, mix together Greek Yoghurt, Milk, Oil, Vanilla Extract and Egg till just combined.
Add the wet ingredients to the dry ingredients and mix till the batter comes together. The batter will be thick. Fold in the blueberries.
Spoon the batter into prepared doughnut pan and not all the way up to the rim. Bake for 12 to 14 minutes. Insert a toothpick into a doughnut and if it comes out clean, your doughnuts are done. If not, add couple of more minutes of bake time.
Allow the doughnuts to cool in the baking pan for about 10 minutes. Transfer to a wire rack and let the doughnuts cool down completely.
Hit it with a little confectioners sugar before serving.
Store in an airtight container for up to 3 days.
