This Burrito bowl is a simple and nourishing lunch idea. Filled with fresh ingredients and plenty of flavour, this lunch bowl is sure to be a hit!
Simple Burrito Bowl
Ingredients
1 Cup corn
3 Cups rice, cooked
1 Tsp hot sauce
1 Can black beans
3 Lettuce leaves, chopped
1½ Lbs chicken breast
1 Tsp pepper
1 Tsp salt
2 Tsps vegetable oil
2 Tbsps lime juice
For the Guacamole:
2 Avocados
2 Tsps salt
1 Lemon
1 Tsps ground pepper
Directions
In a saucepan over medium heat, place the chicken breast, salt, pepper, lime juice, hot sauce, and vegetable oil.
Cover and cook until the chicken becomes golden..
Shred the chicken breast and heat them in the same saucepan for 5 minutes.
For the Guacamole:
Slice the avocados and place them in a bowl with the salt and pepper.
Sliced and squeeze the lemon.
Using a fork mix everything together until smooth.
Fill a bowl with the rice, and top it off with the chicken, guacamole, corn, lettuce, and black beans.
Serve and enjoy.
Tips
Top everything with some shredded monterrey jack cheese
