This 2 ingredient ice cream bread is super easy to make  and results in a delicious and moist bread that is lightly flavoured.  Combine Flour and Ice Cream for a delightful treat!

You can make Ice Cream Bread with any flavour of ice cream, the possibilities are endless.  Try using Chunky Monkey Ice Cream to create ice cream banana bread.  The stronger the flavour of the ice cream, the bolder tasting the ice cream!

Please note that you must not try to use low fat or low/no sugar ice cream for this recipe, and do not substitute the self-rising flour.   Your results will not be the same and may not even end up recognizable as bread.  Just don’t go there.

INGREDIENTS
3 1/2 cups Butter Pecan Ice Cream, melted
2 cup Self-Rising Flour

DIRECTIONS
Preheat oven to 350.
Grease loaf pan.
Combine ingredients and stir until just combined.
Transfer to batter to pan and bake for 40 minutes or until toothpick inserted in middle comes out clean.
Allow to cool.

  1. Are you kidding/??? This is the coolest sounding recipe I’ve ever heard of! My kids are going to freak when I tell them we can make bread out of icecream!

      1. Sounds like a silly question, but is the ice cream melted before measuring the 3 1/2 cups or measured then melted?
        Also, have you tried this with add-ins like chocolate chips or crushed bananas (my grandson loves banana bread)? Wondering how that effects baking results and times.

        1. Measured then melted, it doesn’t even have to be completely melted if you can’t wait, it’s just easier to combine vs just softened.

          No, I haven’t tried it with add-ins but I think as long as you didn’t go overboard it shouldn’t affect anything.

  2. Made the ice cream bread and must say it was very good; but much better if you buttered the slice of bread…………… so good and so easy.

    1. I don’t think it will work with frozen yogurt because the fat content is much lower compared to the full fat ice cream you need for this.

  3. It works! Just use a good quality full fat ice cream like the brand pictured and self rising flour! Then you have ingredients like sugar, milk, cream, eggs, baking soda, baking powder already put in the bread!
