  • Only use ripe Hass avocados. Larger avocadoes tend to have less fat content and won’t give you that rich creamy flavour and texture that you want in a guacamole.
  • If you can only get under-ripe avocados just toss them in a paper bag with bananas to speed up ripening.
  • For an even chunkier guacamole, set aside one or two avocados and dice them instead of mashing them with the rest. Fold them in carefully just before serving.
  • If you want a smooth guacamole simply throw it all in a blender or food processor.
  • Want spicy guacamole? Include some of the seeds from the jalapenos!

How to Store Chunky Guacamole

Guacamole is best served right after preparing it, so if you are serving guests do not try to make it ahead of time.

Leftover chunky guacamole can be stored in the refrigerator for up to three days. To prevent your guacamole from going rancid, you should store it in an airtight container and press a sheet of plastic wrap over the surface of the dip. This will help keep out any extra oxygen that could spoil the dip.

You can also squeeze a bit of lemon or lime juice over the top of your guacamole before storing it to further prevent oxidation. If stored properly, your chunky guacamole will stay delicious and flavorful for three days in the fridge.

Can You Freeze Guacamole?

Freezing guacamole isn’t recommended due to its high water content, which can cause it to become watery and mushy after it thaws., if you want to freeze guacamole for future use, it’s best to do so without any added ingredients such as tomatoes, onions, or jalapeños.

To freeze the dip, scoop portions of the guacamole into freezer bags, removing as much air from them as possible. You can also freeze it in ice cube trays and then pop the cubes out when they’re frozen solid and store them in a sealed bag. To thaw guacamole, place it in the refrigerator overnight or until it is fully defrosted.

About the Ingredients for Chunky Guacamole

Avocados – We used four Hass avocados. Hass are the best option for making guac as they are creamy in texture and offer great flavour. Make sure they are just perfectly ripe.

Onion – I like the sweet zing that red onions add. If you aren’t a huge red onion fan simply soak your diced onions in cold water for awhile to take out the sharpness.

Tomatoes – Use roma tomatoes for making guac. They are meaty and hold together well.

Cilantro – I actually really hate cilantro, it tastes like soapy grass to me but I do prefer my guacamole with it. Probably because you get just a hint of it compared to something like pico de gallo. You can totally omit it though, I get it!

Jalapeno – Once jalapeno’s are seeded I find them pretty mild in spice level, but they have a unique flavour that adds a lot to guacamole. Serrano’s are a great swap that I think work well.

Garlic – Use only fresh garlic, garlic powder won’t do.

Limes – Freshly squeezed lime juice is best but bottled lime juice works in a pinch, although the flavour is a bit different.

Seasoning – Salt, pepper, and cayenne powder bring everything together.

How to Make Chunky Guacamole

Yields: 6 cups | Prep time: 15 minutes

Ingredients:

  • 4 large Hass avocados
  • ½ medium red onion, diced
  • 2 medium tomatoes, seeded and diced
  • ½ bunch cilantro, chopped (about ¾ cup)
  • 3 jalapeno peppers, seeded and diced
  • 2 garlic cloves, minced
  • 2 medium limes, juiced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne powder

Directions:

Avocado in a glass bowl.

Halve the avocados by running a knife around it lengthwise, then twist the avocado to pull it apart. Discard the pit. Use a spoon to scoop the flesh into a large mixing bowl.

Use a fork to roughly mash the avocados as smooth or chunky as you like. I prefer to keep it a little chunky with the chunks similar in size to the onion and tomatoes.
