This Creamy Turkey & Corn Chili is a delicious twist on the classic dish. Turkey chili paired with a creamy sauce, corn and beans makes for a flavourful family meal.
Creamy Turkey & Corn Chili
Ingredients
1 1/2 Tbsps vegetable oil
1 lb lean ground turkey
1/4 Cup diced onions
1/2 Cup diced tomatoes
1 Cup corn
1/2 Cup pinto beans
2 Tbsps chili powder
1 Tsp salt
1 Tsp pepper
1 Tsp cayenne pepper
1/4 Cup heavy cream
1/8 Cup tomato paste
1/2 Cup vegetable broth
Directions
Pour vegetable oil in a large saucepan and heat for one minute.
Add the meat and cook until brown on all sides.
Transfer the cooked meat to a separate bowl.
Using the same pan sauté the onions until they turn a clear color.
Add in the tomatoes and corn and stir everything together.
Transfer everything from the saucepan to a large pot.
Heat pot on medium flame and add in all of the spices. Also, add the pinto beans, heavy cream, tomato paste and vegetable broth.
Stir until well blended.
Reduce fire, cover with lid, and let simmer for 20 minutes.
Garnish with diced tomato, green onions and serve with tortilla chips.

Tip
For a less traditional approach you can swap out the tortilla chips for sweet potato chips.
