To avoid burning your food, you need to ensure your skillet isn’t too full with sweet potatoes.
If your cast iron skillet is 9-10 inches, the ideal amount of diced sweet potato is about 2-3 cups.
If you are going to double the recipe, cook the sweet potatoes in batches.

How to Make a Ground Turkey Sweet Potato Skillet
Yields: 6 Servings | Prep time: 5 minutes | Cook time: 25 minutes
Ingredients:
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 pound ground turkey
- 1.5 tablespoons ground cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup onion, diced
- 1 yellow bell pepper
- 3 small or 2 large sweet potatoes, peeled and diced (about 3 cups)
- ½ cup water
- ½ cup mozzarella, shredded
- ¼ cup fresh cilantro, chopped
Directions:
Heat a large cast iron skillet over medium-high heat. Add oil, then the garlic and cook for 1 minute before adding the ground turkey. Use a wooden spoon to break apart meat and continue cooking approximately 8 minutes until browned.
Add cumin, chili powder, salt and pepper. Stir well to incorporate.
Add onion and bell pepper, and cook for 3-4 minutes.
Add diced sweet potato and water. Stir and cover with a lid for approximately 6-8 minutes until the sweet potatoes soften. Add additional water during this process if needed to keep the meat from drying out.
Remove lid and add additional salt and pepper if needed. Top with shredded mozzarella and allow it to melt. Remove skillet from heat and garnish with fresh cilantro before serving.

I am trying to eat healthier so I tried this. I did add spinach and sour cream. I thought it was very good but if I make it again I would add cut up apples! Sweet potatoes and apples pair so well together.

Made this for me and my boyfriend this evening and unfortunately this dish was too bland for us. I followed the recipe minus the onion (my boyfriend doesn't like them) but for some reason even with all the spices and cheese there was hardly any flavor. Not sure I will make this again.

Thanks for the recipe - so versatile. I made a few tweaks based on our taste and what I had on hand: added a chopped jalapeno pepper, 1 can of diced tomatoes, about 1/2 cup to a cup of frozen corn, a can of black beans. I also left on the peel on the potatoes since it does't take anything away from the taste + adds some nutritional value (and less work!!). I added a little shake of oregano along with the other spices. I did have to add more salt with my additions. I also sauteed the garlic, and then turkey in aqua faba to help reduce fat, and since I had some to use. No cheese or cilantro since I didn't have any. I added the juice of a lime once it was cooked. Topping options were chopped red onion, greek yogurt and avocado. YUM!
