Cucumber Simple Syrup
This homemade Cucumber Simple Syrup results in a naturally flavoured simple syrup that tastes divine when added to water or other beverages. The beautiful bright colour is completely natural too!
Cucumber Simple Syrup
Yields: 2 Cups
Ingredients:
1 Cup Sugar
1 Cup Water
1 Cucumber, washed and shredded (leave skin on)
Directions:
Bring the sugar and water to a boil in a medium saucepan, stirring occasionally until mixture becomes slightly syrupy.
Remove from heat and stir in cucumber. Cover and set aside to steep for 30 minutes.
Place a fine mesh sieve over a bow, l and pour syrup over to strain out solids. Use the back of a spoon to extract as much liquid as possible.
Store in an air tight container in the fridge.

I think 1 cucumber weighs about 10oz. Does that seem equivalent to the amount used for this recipe?
Yes, also I used an English cucumber, I noticed that I did not specify that clearly.
