Butter – Using unsalted butter and then adding salt gives you the best control over the amount of salt in the recipe. You can use salted butter if you prefer but you will want to halve the additional salt.

Sugar – We are using a combination of white granulated sugar and brown sugar to get just the right amount of sweetness.

Eggs – It is best if you use room temperature eggs.

Vanilla – Pure vanilla extract will always give you the best results, but you can always use artificial instead if that is what you have on hand.

Flour – Make sure you spoon and level your flour so that the cookies don’t turn out dense. You also want to make sure you don’t over-work your flour when mixing the cookie batter. Only mix until everything is just combined or your cookies won’t be soft and fluffy.

Baking soda – To leaven your cookies, so they are nice and fluffy. Make sure it;s still active for best results! (no older than 6 months.)

Salt – Makes all the ingredients shine, if you use salted butter you may want to use only half of the salt.

Key limes – Get your juice and zest from key limes if possible. You can substitute with regular fresh limes but it will taste slightly different. Do not use bottled lime juice, a lot of the flavour comes from the zest.

How to Make Crumbl Key Lime Pie Cookies

Yields: 16 Cookies | Prep time: 10 Minutes | Cook time: 12 Minutest

Ingredients:

1 ½ Cups unsalted butter, softened
¾ Cup granulated sugar
1 ½ Cups brown sugar
2 large eggs, room temperature
1 tablespoon pure vanilla extract
4 Cups all-purpose flour
3 Cups graham cracker crumbs
2 teaspoons baking soda
1 teaspoon kosher salt

For the Key Lime Frosting:

2 Cups unsalted butter, softened
4 Cups powdered sugar
4 tablespoons heavy whipping cream
1 tablespoon key lime juice
3 tablespoons key lime zest
½ Cup graham cracker crumbs

Directions:

Preheat the oven to 350 degrees Fahrenheit. Line two cookie sheets with parchment paper, and set aside.

Using a stand mixer, beat the butter, sugar, brown sugar, eggs, and vanilla until combined and fluffy.

Using a medium bowl, whisk together the flour, graham cracker crumbs, baking soda and salt.

Gradually mix the dry ingredients into the wet ingredients and continue to beat until a dough has formed.

Using a medium ice cream scooper, scoop dough into your hands and roll into balls.

Place cookie balls onto the cookie sheets and lightly press into a thick disk.

Bake the cookies for 15 minutes or until lightly golden brown. Allow to cool completely before frosting.

Using a stand mixer, beat the butter, powdered sugar, heavy whipping cream, key lime juice, and zest until combined, smooth and fluffy.

Spoon the frosting into the piping bag.

Pipe a thick spiral of frosting around the top of the cookie starting in the centre and going around until you reach the edge.
