Should you cut the fat cap off a Pork Loin?

Do not cut the fat cap off of your pork loin. Keeping this intact during cooking will keep the roast moist and juicy. It also adds a load of flavour, making your pork loin roast extra delicious.

It’s important to note that the fat cap should be on top of the pork loin going into the oven. This way, it will render during cooking and baste your roast as it cooks!

This recipe works perfectly for a 2 lb pork loin but if you need to adjust for a larger pork loin simply increase the cooking time by 25-28 minutes per pound.

For best results, pull your pork loin roast out of the oven at an internal temperature of 145°F and allow it to rest for at least 10 minutes before serving.

How to Store Leftover Pork Loin

Pork loin can last for up to five days when stored in the refrigerator.

The pork loin should be stored in an airtight container or placed on a plate or dish covered with plastic wrap or aluminum foil to avoid contamination from other foods.

Leftovers can be kept in a freezer for up to 3 months when stored properly in an airtight container.

It is important to label your roast properly with the date it was frozen on, so it can be taken out of the freezer before it expires.

The best way to reheat pork loin is in the oven. Preheat the oven to 350 degrees Fahrenheit and wrap the pork loosely in foil. Heat the pork loin through until warmed. The time it takes to heat through depends on it’s weight.

About the Ingredients for Honey Mustard Pork Loin

Pork loin – I used a 2 pound boneless roast with the skin on, if you use a larger roast you will need to adjust the cook time accordingly.

Honey and brown sugar – To balance the mustard and spices.

Mustard – Yellow mustard. You could also use honey mustard in place of the honey and the mustard.

Oil – Use a neutral flavoured oil.

Seasoning – A mix of salt, pepper, coriander, nutmeg, whole cloves, and pork spice mix season the rub. If you don’t have a basic pork seasoning on hand substitute with a mix of garlic powder, cumin and smoked paprika.
