Seasoning – A mix of salt, pepper, coriander, nutmeg, whole cloves, and pork spice mix season the rub. If you don’t have a basic pork seasoning on hand substitute with a mix of garlic powder, cumin and smoked paprika.

How to Make Honey Mustard Pork Loin
Yields: 8 Servings | Prep time: 15 Minutes | Cook time: 2 Hours 20 Minutes
Ingredients:
- 2 lbs pork loin, skin-on
- 2 tablespoons honey
- 1 1/2 tablespoons yellow mustard
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/3 teaspoon ground coriander
- 1/3 teaspoon ground nutmeg
- 1/3 teaspoon pork spice mix
- 1 1/2 tablespoons brown sugar
- 8-10 whole cloves
- 1/4 teaspoon black pepper
Directions:
Preheat the oven to 375 degrees Fahrenheit.
In a bowl, mix olive oil, mustard, honey, salt, spices and sugar.
Wash the pork loin and pat dry. Season the meat side with salt and pepper.
Rub the marinade over the pork loin using 2/3 of the marinade.
Turn the pork loin over so the fat cap is up. Score the skin and fat cap using a knife, then spread the remaining marinade over the fat cap.
Place a whole clove into the cuts in the skin to give the pork flavour, without making the meat bitter.
Wrap the pork in two layers of foil.
Place the wrapped pork in a dutch oven or any casserole dish with a lid.
Cook the pork for 40 minutes. You can then open the lid, unfold the foil and cook for another 20 minutes to brown the skin. The internal temperature when done should be at least 145 degrees Fahrenheit when measured with a meat thermometer.
