Caramel Apple Cupcakes

These Caramel Apple Cupcakes are a fun and fresh tasting dessert perfect for fall that everyone will love.

These caramel apple cupcakes are a special autumn treat.  A little bit spice, a little bit sweet and a whole lot delicious with caramel drizzled over the whole thing.  These cupcakes are decadent and anything but boring with fresh apples studding the cupcakes.  It’s a taste of autumn in every single bite.  Enjoy!

 

Caramel Apple Cupcakes

Yields: up to 2.5 dozen cupcakes  |  Total time: 40 minutes

 

Ingredients:

1 box of spice cake mix

2 cups tart apples, peeled and chopped

For the Frosting:

7 cups confectioners’ sugar

¾ cup butter, softened

½ cup apple cider (or apple juice as substitute)

¾ tsp. ground cinnamon

pinch of salt

caramel sauce (for drizzling)

Directions:

Preheat oven to 350F. Line muffin tins, set aside.

Prepare cake batter according to package instructions. After cake is mixed, add in chopped apples and combine well.

Fill cupcake liners ¾ full. Bake for approximately 20 minutes or until toothpick comes out clean. Allow to cool completely before frosting.

For the frosting, combine sugar, butter, cider, cinnamon, and salt in a large bowl. Beat for 3-4 minutes with electric mixer until light and fluffy.

Pipe frosting onto cooled cupcakes.

Drizzle the caramel sauce on top of the frosting.

I do like this recipe and I know that my son loves apples and caramel (though usually not together) and I'm pretty sure he'd like these :-)
