How to Make Key Lime Pie

Yields: 8 Servings | Prep time: 15 Minutes | Cook time: 18 Minutes

Ingredients:
For the Crust:

  • 1 1/2 Cups crushed Graham Crackers
  • 5 Tablespoons melted Butter
  • 1/3 Cup Granulated sugar

For the Filling:

  • 3 Large egg yolks
  • 2 teaspoons Lime zest
  • 14 oz Sweetened condensed milk
  • 2/3 cup Lime juice

For the Topping:

  • 1 cup Heavy Cream
  • 1 tablespoon Sugar

Directions:

Preheat oven to 350 degrees Fahrenheit. Grease a 9″ pie pan with butter.

Mix together graham cracker crumbs, butter and sugar until combined.

Press graham crumb mixture into bottom and sides of the prepared pan.

Bake 8 minutes or until set, then set aside to cool.

Whip egg yolks and lime zest in the bowl of a stand mixer until fluffy.

Slowly add in condensed milk while continuing to beat. Beat until thick and fully incorporated.

Add lime juice and beat at low speed just until combined.

Pour the lime mixture into the crust.

Bake for 10 minutes or until the filling sets. Cool completely on a wire rack, then chill in the refrigerator for at least 2 hours.

Freeze for 15 minutes just before serving.

Whip the cream and sugar together until stiff peaks form.

Garnish pie with whipped cream before serving.
