Low Carb Blueberry Donuts

Ingredients:

  • 2 ¼ cup Almond flour
  • ½ cup Monkfruit sweetener
  • 4 Large eggs
  • 1 teaspoon Baking powder
  • 1 teaspoon Apple cider vinegar
  • ¼ cup Whole milk
  • ¼ cup Fresh blueberries

For the Glaze:

  • 2 cups Powdered sweetener
  • 1-2 Tablespoons Whole milk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Blueberry juice (optional, for pink colour)

Directions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease a doughnut pan or use a silicone doughnut mould.
  1. Prepare the Donut Batter:
  • In a large bowl, combine the almond flour, monkfruit sweetener, and baking powder.
  • In a separate bowl, whisk together the eggs, apple cider vinegar, and whole milk.
  • Add the wet ingredients to the dry ingredients and mix until well combined.
  • Gently fold in the fresh blueberries.
  1. Bake the Donuts:
  • Spoon the batter into the prepared doughnut pan, filling each mould about ¾ full.
  • Bake for 15-20 minutes, or until a toothpick inserted into the donuts comes out clean.
  • Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
