How to Temper your Chocolate

Tempered chocolate has a shiny, flawless appearance.

Slowly heating melted chocolate while stirring puts it into temper. If chocolate is not tempered properly, your finished product will be dull and have problems holding its shape.  You can quickly and easily temper chocolate in the microwave using the following steps.

Step 1Chop your chocolate.  Chop as finely as you can with a knife. This will help it melt more evenly. If you chocolate chips like I did you can skip this step.

Step 2Put the chocolate in a heat safe bowl and microwave for 30 seconds. It won’t be melted yet. Stir with a spatula, moving the chocolate from the outside edges, to the centre to evenly heat it.

Step 3Microwave the bowl again for 15 seconds. Then remove and stir from the outside in as we did in the last step. Use an instant read thermometer to take the temp of your chocolate to make sure it’s not above 90ºF.

Step 4Repeat this process 2-5 more times until the chocolate is almost melted. Once almost melted, just continue stirring until the chocolate is fully melted from the residual heat from the bowl to help prevent overheating.

Step 5Test the chocolate. Pour some chocolate onto a piece of parchment paper and put it into the fridge for 5 minutes. If your chocolate is shiny and snaps when broken, then it’s tempered and ready to go in your moulds.

What Chocolate can I use to Make Chocolate Dipped Cookies?

Basically just avoid candy melts as they won’t make a good tasting cookie. If you don’t want to use chocolate chips, then Ghirardelli chocolate wafers melt as nicely as candy melts, but taste great too.

Can You Freeze These Chocolate Dipped Oreos?

Temperature variances will ruin the chocolate that the cookies are dipped in – whether too hot or too cold. I would not advise that you attempt to freeze chocolate dipped cookies.

How to Store Oreo Penguins

Chocolate covered Oreo cookies are best stored in an airtight container at room temperature.You will want to layer the cookies laid flat in layers, with a piece of parchment paper between each layer. This will keep them from sticking together and make it easier to remove the cookies from the container.

About the Ingredients for Penguin Oreo Cookies

Oreos – Oreos are my personal favourite for dipping in chocolate but if you don’t have a package of chocolate oreo cookies on hand, you can use any round sandwich cookie you like. I used just regular Oreos to make these cute penguins, but double stuff Oreos would work.

Chocolate chips – Milk chocolate is probably the best sweetness level for these if you are serving kids. If you are presenting these to adult I would probably go with dark chocolate. You could also use semi-sweet baking chocolate or dark chocolate too. It really comes down to which type of chocolate you like the flavour of best.

White Chocolate Melts – White candy coating wafers are perfect for making round tummies. If you can’t find any you could always use some vanilla frosting, however a white chocolate wafer is the easiest way to get perfectly round penguin tummies.

M&M’s – The regular sized M&Ms are perfect for earmuffs. You can substitute a regular size m&m with other candies like skittles. Just be sure to pick your rainbow straw to be the same color of the m&m you choose.

Mini M&M’s – Again, although I think using a mini M&M is the perfect size for the penguin beaks, you could also use orange starburst molded into beaks.

Candy eyes – There are other things you can do here like piping a dot of chocolate onto the flat end of white chocolate chips, but a container of small candy eyes are just so much easier. You could also use white chocolate chips with the flat side out, or some white icing then add a drop of black decorating gel for the pupils.

Sour Punch Rainbow Straws – If you can’t get your hands on these, any licorice straws or long piece of rainbow candy will do. Air heads xtremes rainbow would work if you cut them thin.

Optional – You can turn these into oreo pops by sandwiching lollipop sticks inside the cookies before dipping them in chocolate.

How to Make Penguin Oreos

Yields: 2 Dozen Penguins | Prep time: 15 Mins | Cook time: 2 Mins

Ingredients:

  • Oreos
  • Chocolate Chips
  • White Chocolate Melts
  • M&M’s
  • Mini M&M’s
  • Candy Eyes
  • Sour Punch Rainbow Straws

Directions:

Line a baking sheet with parchment paper and set aside.

Melt chocolate chips in a bowl according to package directions.

Dip an oreo into the chocolate, completely submerging to coat both sides. Use a fork to lift the cookie out of the melted chocolate and tap the fork on the side of the bowl to allow any excess chocolate to drip off. Place the chocolate coated oreo on the prepared baking sheet.

Add 1 white chocolate melt to the lower half of the oreo for the penguin’s belly.

Press two candy eyes and an orange Mini M&M in the center for the beak.

Take 1 Sour Punch Rainbow Straw and cut it into about 2-2 ½ inch pieces. Next, slice it lengthwise in half. Wrap one half of the straw around the top of the penguin oreo to create the strap for the earmuffs.

Add two regular sized M&M’s that match the color of the Sour Patch Rainbow Straw to the sides of the oreo to complete the ear muffs.

Repeat this process to create as many Penguin Oreos as desired.

Place the baking sheet in the fridge for 15 minutes to allow the chocolate to firm up.
