Tips for Best Results
- Use fully softened cream cheese so the filling blends smooth and creamy with no lumps. Cold cream cheese will leave small bits in the mixture.
- Freeze until properly firm before scooping. If the mixture is too soft, the balls will be messy and difficult to shape.
- Work quickly when rolling so the cheesecake mixture does not soften too much in your hands. If needed, return it to the freezer for 10 to 15 minutes.
- Use fine graham cracker crumbs for the best coating. Larger crumbs will not stick as evenly.
- Let them sit briefly before serving for the perfect creamy texture. Straight from the freezer they will be quite firm.
How to Store Leftover Strawberry Cheesecake Bites
Once you’ve made your strawberry cheesecake bites, you’ll need to store them properly to keep them fresh. Leftover cheesecake bites can be stored in the fridge for up to four days. To store them, place the bites in an airtight container or wrap them tightly in plastic wrap.
These strawberry cheesecake bites also freeze well. To freeze them, place the bites on a baking sheet and in the freezer for about an hour. Then place them in a freezer-safe container or wrap them tightly in plastic wrap. Freeze for up to three months. When you’re ready to enjoy them, thaw the bites overnight in the fridge.

Ingredients and Substitutions
- Jam – You can use homemade strawberry jam or store-bought. Also try this with other flavours of jam!
- Cream cheese – Use full fat cream cheese for the best flavour and texture!
- Sugar – Just plain white granulated sugar.
- Lemon juice – Helps to give the filling more of a real cheesecake texture and flavour.
- Cool whip – Real homemade whipping cream works here too!
- Graham cracker crumbs – Make your own or use homemade. The filling is pretty “sticky” so you do need a dry coating.

I must make these!
What is strawberry fruit spread? Jelly or Jam?
Thanks
I found these very messy and hard to roll into balls. Any suggestions?
Place the cream cheese mixture in the freezer for awhile to set up before you make your balls. It can also be easier to make the balls if you use a tablespoon or small cookie scoop to scoop the mixture into balls rather than just rolling in your hands which can warm up the mixture and make it too sticky to work with.
I was surprised to see that there are no fresh strawberries in these. I was thinking about dicing some berries quite small and adding them to the cream cheese. Do you think this would work?
Using fresh berries might make it harder to work with because of the extra liquid. Freeze dried strawberries ground up might be a better option. If you do try with fresh strawberries let us know how it turns out!
When u say cream together do you use a electric mixer?
You can do it by hand to but it is a lot easier and faster to use an electric mixer.
Would they hold up if I omit the strawberries? I just prefer plain cheesecakes
Yes, that would work.
What is strawberry fruit spread? Jelly or Jam??
Fruit spread is jam made without added sugar, it tends to have chunkier fruit pieces. You can use that or jam. I wouldn’t use jelly.
I also am finding that even after 2hrs it’s not forming up. Hmmm I used an electric mixer.. I’ll try leaving in overnight
I ❤️ the your delicious recipes 😋!
I love these but I would add less lemon juice and prefer strawberry preserves
When you say 1cup cool whip do you mean the 8 Oz tub or just a measuring cup full
A measuring cup full.
