You can test if they are done by sticking a toothpick into the centre of a cupcake, and if it comes out clean, they are done.

You can also test by gently pressing down on the cupcake and looking to see if it bounces back completely or not. If it does, they are done, if your finger left a dent they need more time.

How to Store Frosted Cupcakes

To prevent these fluffy cupcakes with their delicious buttercream frosting from drying out, store them as you would other baked goods. These cupcakes should last up to three days at normal room temperature covered in plastic wrap or stored in an airtight container, and about a week if refrigerated.

If you don’t plan on eating the cupcakes within two to three days of baking them, place the unfrosted cupcakes in an airtight container and freeze for up to two months.

Thaw at room temperature for about 5 hours, and frost when you are ready to serve.

Cake mix – I used chocolate cake mix but you can use your favourite cake mix or homemade cupcake recipe.

Eggs – Use room temperature eggs.

Milk – You can use any milk, but whole milk will give the cupcakes a better flavour and texture. Make sure it is room temperature.

Oil – Vegetable oil will give a moist cake, for better flavour use half butter and half oil. Avoid swapping entirely with butter unless the cupcakes will be served the same day they are prepared.

Butter – For the frosting make sure the butter is soft so that it gets good and creamy.

Powdered sugar – Icing sugar makes a nice smooth frosting.

Vanilla – Use pure vanilla extract for the best flavour, but you can use artificial instead if that is what you have on hand.

Cream – You can swap with milk instead, but cream is better.

Eyeballs – I used Trolli Glotzer candies for the eyes but any candy eyeballs will work.

Food colouring – Only use gel food colouring, liquid food colouring isn’t vibrant enough and can alter the texture of the frosting.

How to Make Bloody Eyeball Cupcakes

Yields: 14 Cupcakes | Prep time: 45 Minutes | Cook time: 20 Minutes

Ingredients:

  • Triple chocolate cake mix
  • 3 large eggs, room temperature
  • ½ cup vegetable oil
  • 1 ¼ Cup whole milk, room temperature

For the Vanilla Frosting:

  • 1 ½ Cups unsalted butter, softened
  • 5 ½ Cups powdered sugar
  • 3 teaspoons pure vanilla extract
  • 4 tablespoons heavy whipping cream
  • 3 packages Trolli Glotzer
  • Neon Purple, Neon Green, Neon Pink, Magenta gel food colouring

Directions:

Preheat oven to 350 degrees Fahrenheit, and place cupcake liners into a cupcake pan.

Using a stand mixer or hand beater, combine all cupcake ingredients and beat until just combined and smooth.

Fill the cupcake liners ¾ way full with batter.

Bake in the oven for 20 – 22 minutes, or until the tops bounce back when touched.

Allow to cool for 10 minutes in the pan, then remove to cool completely on a wire rack.

Using a stand mixer, cream the butter until light and creamy. Beat in the powdered sugar, vanilla and heavy whipping cream until combined, creamy and stiff.

Divide the frosting between 3 bowls.

Add a few drops of neon purple into one bowl and mix until blended.

Add a few drops of neon green into another bowl and mix until blended.

Add a few drops of the neon pink and magenta and mix until blended.

Scoop the neon purple frosting into 1 large piping bag fitted with 1A tip.

Scoop the neon green frosting into the second piping bag with 1A tip.

Scoop the pink frosting into the last large piping bag fitted with a #8 tip.

Cupcake with a layer of purple frosting.

Using the purple frosting, pipe a ring of purple around the top of the cupcake.

Cupcake with a layer of green frosting on top of the purple frosting.

Using the green frosting pipe a slightly smaller ring of green frosting on top of the purple frosting.

Alternate two more times with the green and purple frosting creating a cone like shake with the decreasing sized frosting rings.

Blood drips over the top of the cupcake made with pink frosting.

Using the pink frosting, create thick “blood drips” around the top of the frosting.

Remove the eyeball candy from the package and carefully place it on top of the frosting.
