Ingredients:
- 1/2 Tablespoon salted butter
- 1 1/2 Tablespoons olive oil, divided
- 1 yellow onion, diced
- 1 Tablespoon garlic, minced
- 2 Tablespoons cajun seasoning
- 4 cups chicken broth
- 5-6 sweet potato, peeled and cubed
- 2 Tablespoon fish sauce
- 1 cup corn kernels
- 2 teaspoons Smoked paprika
- ¼ teaspoon Cayenne powder
- 1 Tablespoon lemon juice
- salt and pepper to taste
- 1 pound shrimp, peeled and deveined
- 1 Tablespoon cajun seasoning
Directions:
Heat a dutch oven over medium high heat.
Add the butter, 1/2 tablespoon oil, and onion, cook until tender.
Add the garlic and cajun seasoning to the onions, and toss to combine.
Cook a further 2-3 minutes.
Add the sweet potatoes, and pour in the broth. Stir to combine.
Bring the sweet potatoes to a boil and cook for 3-4 minutes.
Reduce the heat to medium-low and simmer until the potatoes are tender, about 25 minutes.
Turn off the heat and allow to cool for 15 minutes.
Add the sweet potato mixture to a blender and blend on high until pureed.
Pour the soup back in the dutch oven, and add the fish sauce, canned corn, paprika, cayenne,
and lemon juice.
Season the soup with salt and pepper to taste.
Heat the soup over low heat.
In a medium sized bowl add the shrimp and cajun spice, toss to combine.
Heat a medium saucepan over medium heat, add the remaining oil.
Add the shrimp to the saucepan and cook for 4-5 minutes.
Pour your soup into the bowls and top with the cajun shrimp.
