How to Make Minnie Mouse Strawberry Parfaits

Yields: 6 8-oz Parfaits | Prep time: 15 Minutes | Chill time: 60 Minutes

Ingredients:

For the Strawberry Cool Whip:

  • 6 oz strawberry jello
  • 16 oz cool whip

For the Chocolate Cool Whip:

  • 1 – 6 oz chocolate jello
  • 2 – 8 oz cool whip

For the Cookie crumble:

  • Frosted loft house cookies

For the Garnish:

  • Homemade whipped cream
  • Valentine’s day sprinkles
  • Ghirardelli melting wafers
  • Red fondant mini bow

Directions:

Using a small pot, boil a cup of water on the stove.

Gradually pour the jello powder into a medium heat proof bowl, then pour in the hot water and stir until the jello powder dissolves completely.

Add a cup of cold water, and stir well again.

Pour the jello into a shallow dish into the fridge for about 30 minutes, or until its just starting to
set. Remove from the fridge and whisk the jello until it is chunky.

Gently fold the cool whip into the strawberry jello, and place back into the fridge.

Follow the same steps as the strawberry directions above for the chocolate pudding and once
finished place into the fridge for 60 minutes.

When ready to assemble, scoop the two puddings into their own piping bags fitted with large round tips.

Crush the sugar cookies in a food processor, then scoop ¼ cup of crushed cookies into the bottom of an 8 oz glass.

Take the piping bag with the strawberry mixture in it, and pipe a thick layer around the top of the
crushed cookies.

Take the chocolate mixture and pipe a thin layer on top of the strawberry pudding.

Carefully pour another ¼ cup of crushed cookies on top.

Pipe the second layer of the strawberry mixture on top of the second cookie layer, then pipe a thick layer of chocolate pudding on top.

Place into the fridge until ready to serve.

Garnish with homemade whipped cream and sprinkles.

Top with a red bow bow in the center of the whipped cream and two chocolate wafers on either side for the ears.
