Broccoli – Use frozen broccoli to cut down on meal prep time. You can also use fresh broccoli if desired. You can also incorporate other vegetables like fresh spinach, or bell peppers.

Cheese – We used mild cheddar, but you can use any type of shredded cheese you like. Pepper jack or sharp cheddar would be really yummy. Sometimes I mix in a little cream cheese with the egg mixture too.

Bacon – Any type of bacon you like is fine. You could also use crumbled up breakfast sausage instead or in addition to the bacon.

Eggs – Just 4 large eggs.

Heavy Cream – You can use any unsweetened milk that you like, but heavy cream will give you light and fluffy results.

Seasoning – We used just onion powder, garlic powder, salt and pepper. You can get a little creative here and mix things up. If you like a little heat, try adding a pinch of cayenne pepper.

Ingredients:

  • 1 12 oz bag steamable frozen broccoli florets
  • 1 cup shredded mild cheddar cheese
  • 6 slices bacon
  • 4 large eggs
  • ⅓ cup heavy cream
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Directions:

If making the day of, preheat the oven to 350 degrees F.

Spray an 8×8” casserole dish with cooking spray and set aside.

Broccoli florets.

Place frozen broccoli in the microwave and steam according to package directions. Transfer steamed broccoli to a paper towel lined plate to soak up excess moisture. Use a sharp knife to chop any larger pieces into bite-sized pieces. Set aside.

Cook bacon in a saute pan. Transfer cooked bacon to a paper-towel lined plate to soak up excess grease. Crumble bacon and set aside.

Add eggs, milk and spices to a glass measuring cup or bowl. Whisk to combine.
