Feel free to switch things up to suit your own tastes, or just to change things up.

Change up the beans. You don’t have to use black beans, you can use kidney beans, navy beans or pinto beans instead.

Use different meat. You can use ground beef, ground chicken, shredded rotisserie chicken, steak, or even tofu.

Make it chili. Add the beans, corn, and a can of diced tomato to the ground meat along with a little beef broth and cook it through until a thick sauce forms. Divide it between the four containers and still add the rest of the ingredients if desired.

Tips for Making the BEST Turkey Burrito Bowls

  • Let the turkey simmer after adding the seasoning and water until it thickens up. You can let it simmer until all the water is cooked off, or leave it a little saucy. Whatever your preference.
  • These Burrito bowls are meant to be served cold, however you can certainly heat them up if preferred! If you do plan to heat them, I would store the tomatoes and cheese separately and add them after heating the rest of the bowl.
  • Always wait to season the meat until it is cooked through, if you choose to use ground beef you may need to drain off any fat in the pan before seasoning. I’d also add the onion at the same time as you add the seasoning if you are doing beef.
  • Add salsa, sour cream and/or guacamole to smaller containers so they are packed and ready in advance as well.

Oil – I used avocado oil but any neutral flavoured oil is fine.

Onion – Sweet onion or yellow onion is fine.

Turkey – Ground turkey may be replaced with ground meat, shredded rotisserie chicken, steak, etc… Ground turkey is a good lean protein that is pretty inexpensive though.

Taco seasoning – You can use store bought taco seasoning, or make your own homemade taco seasoning.

Water – You can use chicken broth in place of the water for an extra kick of savoury flavour.

Corn – Canned corn kernels are best but you could totally thaw out some frozen corn too.

Black beans – You can substitute with red kidney beans if you prefer them.

Cauliflower – Replace cauliflower rice with mixed greens, romaine or spinach to create a taco salad instead. Feel free to prepare actual rice instead if you prefer – try cilantro lime rice here!

Tomatoes – You can use fresh chopped tomato or even diced tomatoes from a can. If you have time, pico de gallo is an amazing substitute.

How to Make Turkey Burrito Meal Prep Bowls

Yields: 4 servings | Prep time: 10 minutes | Cook time: 20 minutes

Ingredients:

  • 1 tablespoon avocado oil
  • ¼ cup onion, finely chopped
  • 1 lb ground turkey
  • 2 tablespoons taco seasoning
  • ½ cup water
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 12 oz bag of frozen cauliflower rice
  • 1 cup tomatoes, chopped
  • Optional additions: shredded colby-jack cheese, freshly chopped cilantro, chopped avocado, jalapeno slices, lime wedges

Directions:

Onion cooking in a skillet.

Heat a large skillet over medium-high heat. Once hot add the oil, then the chopped onion. Cook for 3-4 minutes or until tender.

Turkey browning in a skillet.

Add ground turkey to the skillet and cook until browned and no pink remains.

Taco seasoning added to the turkey.

Add the taco seasoning and water. Stir and continue to cook until meat is coated well in seasoning and no excess water remains.

Cauliflower rice in a bowl.

Prepare the frozen cauliflower rice according to package directions.

Allow both turkey meat and cauliflower rice to cool.

Meat and cauliflower divided between the meal prep containers.

Divide the meat and cauliflower rice evenly between four meal prep containers.

The rest of the ingredients divided between the four containers.

Divide the can of drained corn and rinsed and drained black beans between four containers.

Divide chopped tomatoes between four containers evenly.
