I love the flavour of BBQ Chicken but without a BBQ it can be hard to come by. We do have an indoor grill and it does a wonderful job, however grilling is my husbands job. When I want BBQ Chicken I do it myself in the Oven and skip the barbecue altogether. This recipe and technique results in really Delicious barbecue flavour that nobody will guess came straight out of the oven!
The secret is to use bone-in chicken. It keeps the chicken from drying out and adds to the delicious flavour. I used drumsticks in the picture but it works well with the breast and thigh as well. As long as your chicken is bone-in you are good to go!
I have included my favourite recipe for BBQ sauce, but feel free to use your own favourite recipe or even a bought BBQ sauce.
Oven Baked BBQ Chicken
Ingredients:
2 lbs bone-in chicken
Salt & Pepper
Prepared BBQ Sauce
For the Sauce:
3/4 cup ketchup
1/2 cup apple cider vinegar
2 tbsp Worcestershire sauce
2 tbsp soy sauce
1/2 cup brown sugar
1/2 tsp each salt & pepper
1/4 tsp onion powder
Directions:
Preheat oven to 375 F.
Season the chicken pieces with salt and pepper to taste.
Place a cooling rack inside a sheet pan.
In a small saucepan, combine sauce ingredients and bring to a simmer and stir well for 1 minute.
Divide the sauce and place half in a bowl you can toss the chicken in, reserve the other half for basting.
Once the chicken is covered, place on the cooling rack and bake on the middle rack in the oven for 45 minutes.
Baste the chicken every 10-15 minutes depending on how saucy you like your BBQ chicken.
