Jello – Use cherry jelly powder for the bottom layer, and pineapple jello for the top layer. If you can’t find pineapple jello use plain gelatin prepared with pineapple juice.

Vodka – Vanilla vodka or cake vodka are your best bet here. You can also use plain vodka if you don’t care for the cake part of the pineapple upside-down cake.

Amaretto – Amaretto has an almond flavour with subtle sweetness. You could use a cherry liqueur in its place.

Coconut rum – Malibu is perfect here, but any coconut or tropical flavoured rum is perfect.

Pineapple juice – Nectar is a good substitute but using juice will give a better texture.

Lime juice – Helps to keep the shot from being too sweet, adds a bit of tang.

Cherries – A maraschino cherry in each shot is a great way to reproduce the cake in this shot.

How to Make Pineapple Upside-Down Jello Shots

Yields: 16 (2 oz) Jello Shots | Prep Time: 10 Minutes | Chill Time: 3 hours 30 minutes

Ingredients:

For the Cherry Jello Layer:

  • 3 oz Cherry jello
  • 1 cup boiling water
  • ½ cup Vanilla vodka, chilled
  • ½ cup Amaretto, chilled

For the Pineapple Jello Layer

  • 3 oz Pineapple Jello
  • 1 cup boiling water
  • ½ cup Coconut rum, chilled
  • ½ cup Pineapple juice, chilled
  • 1 teaspoon Lime Juice, fresh
  • Maraschino Cherries

Directions:

To make the cherry layer, boil 1 cup of water in a medium saucepan.

Add the cherry jello mix and mix to combine. Allow to sit for 5 minutes.

Add the liquors and stir to combine.

Pour the cherry jello mix into the condiment cups ½ way full.

Place in the refrigerator for 30 minutes.

Remove from the refrigerator and add the maraschino cherries, 1 to each condiment cup. Place back in the refrigerator for 1 hour.

Next is the Pineapple layer. In a medium saucepan boil 1 cup of water. Add the pineapple jello mix and mix to combine. Allow to sit for 5 minutes.

Add the liquor, pineapple juice and lime juice. Stir to combine.

Set to the side to reach room temperature.

Once the pineapple jello has cooled pour it on top of the cherry layer, fill to the top.

Place in the refrigerator for 2 hours.
