For the Fajitas
- 2 medium sweet potatoes, peeled and sliced into ½-inch wedges
- 2 bell peppers (mixed colours), seeds removed and sliced
- 1 onion, sliced
- 2 garlic cloves, crushed and separated
- 1 avocado, sliced
- 1 lime, cut into wedges for serving
- 2 tablespoons fajita seasoning, divided
- 2 tablespoons olive oil, divided
- 6-8 small flour tortillas, warmed
For the Zesty Lime Sauce
- 1 cup plain Greek yogurt
- Zest and juice of 1 lime (about 1 tablespoon juice)
Directions
- Preheat the oven to 400°F (200°C).

- In a medium bowl, toss the sweet potato wedges with 1 tablespoon olive oil, 1 tablespoon fajita seasoning, and 1 crushed garlic clove. (Image 1) Spread on a large baking sheet and roast for 15 minutes. (Image 2) Keep the bowl for the remaining vegetables.

- Remove the sweet potatoes from the oven, flip them, and move them to one side of the baking sheet. Spread the peppers and onions on the empty side.
