Potato – Use a starchy potato for the best results; a russet potato works well. You have to make sure you rinse these well, and then dry them even better.
Bacon – Use any kind of bacon you prefer. For a short cut you could use pre-cooked bacon.
Hot dogs – Your favourite hot dogs are your best choice.
Eggs – Sunny side up eggs work well here, the yolks works well as a “sauce”.
Buns – Again, use your favourite hot dog buns. I like mine toasted with butter.
Cheese – Again, use your favourite. Cheddar, Monterey jack, or havarti are good choices.
Tomato – Fresh red tomatoes seasoned with salt and pepper. You could also use cherry tomatoes.

How to Make Breakfast Hotdogs
Yields: 4 Servings | Prep time: 15 Minutes | Cook time: 20 Minutes
Ingredients:
1 Large Potato, peeled
1 tablespoon olive oil
2 Slices bacon
4 Hot dogs
4 Large eggs
4 Buns, toasted
1/4 cup Cheese, grated
1 Medium tomato, diced
Directions:
Grate your potato and place into a sieve, then run cold water over them, agitating them with your hands until the water flows clear.
Remove potatoes to a clean towel and get them as dry as possible. The goal is to rinse off as much starch as possible so you can get some nicely browned potatoes. (Image 1)
Heat a skillet over medium-high heat then add the oil, add the potatoes and cook them until brown, then set aside. (Image 2)
In the same skillet, prepare the bacon and cook until crispy, then set aside until cooled and ready to chop or crumble. (Image 3)

Crack eggs into the same skillet and cook, sunny side up with the bacon fat, until the egg whites are set and cooked through. Season with salt and pepper to taste. (Image 5)
