  • Allow your whoopie pies to completely cool before frosting.
  • Store in a single layer if possible.

How to Store Whoopie Pies

Always make sure your whoopie pies are fully cooled before you put them into an airtight container. Room temperature is the best place to store them, since it’s cool but not cold. A root cellar would be a perfect place for this! They store well at room temperature for up to a week.

If you want the pies to stay fresh for more than a couple of days, put them in an airtight freezer safe container and freeze them for up to 3 months. Let them thaw on the counter a few hours ahead of time when you’re ready to eat them!

About the Ingredients for Chocolate Whoopie Pies

Flour – Make sure you spoon and level your flour so that the whoopie pies don’t turn out dense.

Cocoa powder – Unsweetened cocoa powder should be used here, not hot chocolate mix.

Baking soda – To leaven your pies, so they are nice and fluffy. Make sure it is still active for best results!

Salt – Makes all the ingredients shine, if you use salted butter you may want to use only half of the salt.

Butter – Using unsalted butter and then adding salt gives you the best control over the amount of salt in the recipe. You can use salted butter if you prefer.

Shortening – Vegetable shortening is actually traditionally used as the fat in whoopie pies, but we are using a combination for the flavour of butter but helps the cookies from spreading better than butter. You can actually go all butter or all shortening, but do try it this way at least once. I think you will like the results!

Sugar – Dark brown sugar gives both a little extra moisture as well as a richer sweetness than granulated offers.

Egg – It is best if you use a room temperature egg.

Vanilla extract – Pure vanilla extract will always give you the best results, but you can always use artificial instead if that is what you have on hand.

Milk – Room temperature whole milk will give you the best results, but you can use any dairy milk or non-dairy here.

How to Make Chocolate Whoopie Pies

Yields: 12 Whoopie Pies | Prep time: 20 Mins | Cook time: 12 Mins

Ingredients:

1 ⅔ Cup All-purpose flour
⅔ Cup cocoa powder
1 ½ teaspoons baking soda
½ teaspoon salt
4 Tablespoon unsalted butter, softened
4 Tablespoon vegetable shortening
½ Cup dark brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 Cup whole milk

For the Chocolate Frosting

1 ½ Cups powdered sugar
½ Cup unsalted butter, softened
3 Tablespoons heavy cream
¼ Cup cocoa powder
Chocolate godiva hearts (optional)
1 Cup melted semi sweet chocolate to drizzle on top (optional)

Directions:

Preheat oven to 350 degrees and grease a whoopie pie pan.

Using a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.

Using a standing mixer, beat the butter, shortening and brown sugar until creamy and smooth.

Beat in the egg and vanilla until combined.

Alternate between the flour and milk and gradually mix in until combined.

Spoon 1 ½ tbsp of batter into the whoopie pie cavities

Bake in the oven for about 10-12 minutes or until the tops are fluffy and bounce back when touched

Allow the pies to cool

Using a standing mixer, beat the powdered sugar, butter, cocoa powder and heavy whipping cream until combined, smooth and stiff.

Scoop the frosting into the piping bag.

Pair the whoopie pies with their size mate.

Pipe frosting onto the bottom of the whoopie pies and place the top on top of the frosting and press down lightly.

Drizzle with melted chocolate and place a godiva heart in the center, if desired.
